Easy Spinach Bites

Ingredients
- 20 ounces package frozen spinach
- 2 cups herb stuffing mix
- 1 large onion, chopped
- 3 eggs, well beaten
- 3/4 cup reduced fat Parmesan cheese
- 1/2 cup butter, melted
- 3 dashes hot sauce
- 1/2 teaspoon pepper
- 1/2 teaspoon salt
Instructions
- Cook spinach, drain, squeeze dry and chop fine.
- Combine cooked spinach with stuffing mix, onion, eggs, Parmesan cheese, butter, hot sauce, salt and pepper. Chill mixture for several hours in refrigerator.
- Shape into small bite-sized balls and freeze.
- When ready to use, place spinach balls on cookie sheet sprayed with oil spray and lined with foil.
- Bake at 350 degrees F for 20 minutes and serve.
