Mama's Healthy Sweet Potato Steak Fries

Ingredients
- 1 large yam or sweet potato
- Fat-free cooking spray
- Salt and pepper, dried maple or honey powder to taste (with sugar substitute if available)
Instructions
- Peel sweet potato and slice into steak fry sized pieces.
- Place pieces in a microwave safe round platter or dish.
- Spray with the fat free cooking oil and sprinkle on seasonings to taste.
- Heat on high in microwave until soft. It takes 6 to 9 minutes for the potatoes to become softened in a standard 700 watt microwave oven.
- You can also do this in the conventional oven at 350 degrees F until well soft and well cooked. Serve with a fat free honey mustard sauce on the side if you wish.
