Kung Fu Vegetable Fried Rice
After an afternoon of karate, it's time to sit down to a quick and easy meal of vegetable fried rice. One of our best vegetarian Chinese cook recipes, this healthy meal will fill you up without adding extra pounds to your figure. Healthy Chinese food recipes are not impossible to find if you know where to look!
Notes
- Feel free to substitute chopped cabbage, halved Brussels sprouts, fresh green peas, or other vegetables for the green beans. Also consider substitution with bean sprouts and peas.

Ingredients
- 1/2 cup water or reduced sodium vegetable broth
- 2 medium carrots, peeled and cut into thin pieces
- 2 cups green beans, trimmed and cut diagonally in 1 inch pieces
- 1 tablespoon light vegetable oil
- 4 green onions, sliced into 1 inch pieces
- 3 cups long-grain brown rice, cold cooked
- reduced sodium soy sauce to taste
Instructions
- In a medium to large wok, heat water or reduced sodium vegetable broth until boiling.
- Add carrots and green beans. Simmer covered until vegetables are tender. Remove lid and cook until water is evaporated.
- Transfer vegetables to another dish and add light vegetable oil to the pan. Stir-fry green onions for two minutes.
- Add rice and stir fry two more minutes.
- Add the cooked vegetables and reduced sodium soy sauce. Heat through and serve warm.
