    Healthy Bacon Cheeseburger Upside Down Pizza

    You wouldn't think something with "bacon" or "cheeseburger" in the name could be healthy, but with lowfat meats and cheese and a healthy oil such as canola, you CAN have a healthy casserole. The best part? It tastes great!

    Ingredients

    • 1 pound 95% lean ground beef
    • 1 onion, quartered, sliced
    • 1 bell pepper, cut into bite-sized strips
    • 8 slices turkey bacon, crisp-cooked and crumbled, divided
    • 1 14.5-ounce can chunky pizza sauce
    • 3 Italian plum tomatoes
    • 6 slices lowfat cheddar cheese
    • 2 eggs
    • 1 cup skim milk
    • 1 tablespoon canola oil
    • 1 cup flour
    • 1/4 teaspoon salt

    Instructions

    1. Preheat oven to 400 degrees F. In large saucepan, brown ground beef with onion and bell pepper; drain.
       
    2. Stir in 6 slices of the bacon and pizza sauce.
       
    3. Spoon into ungreased 13x9-inch (3-quart) baking dish.
       
    4. Sprinkle evenly with tomatoes; top with cheese slices. 
       
    5. In medium bowl, beat eggs slightly. Add milk and oil; mix well. 
       
    6. Lightly spoon flour into measuring cup; level off. 
       
    7. Add flour and salt to milk mixture; beat 2 minutes at medium speed, then pour mixture evenly over cheese slices.
       
    8. Sprinkle with the remaining 2 slices crumbled bacon. 
       
    9. Bake at 400 degrees F for 20 to 30 minutes or until topping is slightly puffed and deep golden brown.

    This was ok. Didn't really have a strong cheeseburger taste...I added mustard to help, but I should have added more. The pizza sauce overpowered. I did like it, my husband was ok, but only one of four of my kids liked.

    This is an easy and kid friendly meal. I made it with ground turkey and didn't add additional seasoning and it was pretty tasty so I'd imagine it would be really great w/the ground beef! Good stuff!
