Noodle Bake with Spinach, Yogurt and Cottage Cheese
This unique baked noodle dish is a healthy alternative to overly-cheesy baked pasta dishes. Mix it up and add your favorite veggies or throw in a protein like tuna or chicken.

Ingredients
- 4 ounces noodles
- 1 1/2 teaspoon salt
- 1 1/2 quart water
- 8 ounces yogurt
- 1/2 cup low-fat cottage cheese
- 10 ounces spinach; frozen, thawed
- 2 tablespoons onions, chopped
- 1/2 cup cheddar cheese, shredded
Instructions
- Gradually add noodles and salt to rapidly boiling water so that water continues to boil; cook, uncovered, stirring occasionally, until tender. Drain noodles in colander.
- Preheat oven to 400 degrees F.
- Combine yogurt and cottage cheese; combine noodles, spinach and onion with cottage cheese mixture. Pour into a 1-quart baking dish; top with Cheddar cheese. Cover and bake 20-25 minutes.
- Uncover and bake until cheese is melted and brown.

I will definitely try this recipe but will make a smaller portion just for myself. My husband is not going to eat any dish that has cottage cheese in it. Thanks for this healthy recipe.
