Summertime Casserole
This summertime casserole is the perfect dish for those lazy days of summer. With hearty vegetables sweetened with brown sugar, this summer squash and zucchini recipe is the ideal meal after a long, summer day.

Ingredients
- 1/4 cup brown sugar
- 2 teaspoons salt
- 1/2 teaspoon pepper
- 1/2 cup uncooked, long grain rice (not instant)
- 1 small eggplant, peeled and sliced
- 1 large onion, diced
- 3 medium zucchini, diced
- 2 medium yellow summer squash, diced
- 1 large green pepper, seeded and sliced
- 2 large tomatoes
- 2 tablespoons butter substitute
Instructions
- Mix brown sugar, salt and pepper in a medium sized bowl and set aside.
- Place rice in bottom of a sprayed or nonstick 13x9x2-inch baking dish.
- Layer eggplant, onion, yellow squash, zucchini, green pepper and tomato in baking dish.
- Sprinkle brown sugar mixture over each layer and dot with butter substitute.
- Cover tightly and bake at 350 degrees F for 1-1/2 hours.

I have a similar recipe (same ingredients minus the rice) said to be baked @ 350 for an hour. I put it in my micro for about 12 minutes and it's the same in all respects. You might have to adjust pan size to fit your micro.

This sounds interesting, but.... How does the rice get cooked without any liquid. And who in their right mind wants to turn on the oven in the summer?

This casserole has a great taste, but the rice on the bottom got too crunchy for me! If I try it again, I'll put the rice in one of the middle layers.
