    Turkey and Penne Casserole

    Ingredients

    • 1 cup whole wheat penne pasta
    • 2 onions, chopped
    • 4 stalks celery, sliced
    • 1 red pepper, chopped
    • 2 1/2 tablespoons butter substitute
    • 1 pound ground turkey
    • 1 can condensed mushroom soup
    • 1 can water
    • Salt and pepper
    • 1/2 teaspoon marjoram
    • 2 tablespoons parsley, chopped

    Instructions

    1. Cook the pasta in salted water until just tender.
       
    2. Saute the onions, celery and pepper in the butter or margarine for about 5 minutes. Add the turkey and cook for another 5 minutes.
       
    3. Mix in the soup, water, salt and pepper to taste, marjoram and parsley.
       
    4. Put the cooked pasta in the bottom of a greased casserole dish. Cover with turkey mixture. Cover and cook in a 350 degree F oven for about 1 hour.
