Ingredients
- 8 chicken drumsticks, skin removed and all excess fat removed
- 8 ounces low fat smoked sausage, sliced
- 32 ounces fat free barbecued baked beans (use canned or homemade)
- 15 ounces frozen whole kernel corn, thawed
- 15 ounces can black beans, well rinsed and drained
- 1 3/4 cup frozen baby lima beans, thawed
- 1 1/2 cup onions, chopped
- 1 cup your favorite tomato sauce
- 1 1/2 cup baked corn tortilla chips, crushed
Instructions
- Heat oven to 375 degrees F. Have a shallow 3-quart baking dish ready.
- In the baking dish, mix together the chicken, sausage, baked beans, corn, black beans, lima beans, onions and tomato sauce.
- Cover and bake 1 hour.
- Uncover and sprinkle with chips. Bake uncovered for 15 minutes longer, or until the chicken is cooked through.
