    Ingredients

    • 3 tablespoons butter substitute
    • 1 tablespoon onion, chopped
    • 3 tablespoons unbleached flour
    • 1 cup fat free milk
    • 1 cup fresh celery, chopped
    • 3/4 cup fat free or low fat mayonnaise
    • 2 teaspoons lemon juice
    • Salt to taste
    • 2 hard boiled eggs, chopped
    • 3 cups cooked rice
    • 2 skinless chicken breasts, cooked and cubed
    • Rice Krispies

    Instructions

    1. Preheat oven to 375 degrees F.
       
    2. Melt 3 tablespoons butter substitute.
       
    3. Saute onion until tender.
       
    4. Add flour and stir until smooth. Gradually add milk and stir until thickened.
       
    5. Combine sauce with all remaining ingredients except rice krispies. Mix well.
       
    6. Pour mixture into a baking dish that has been sprayed with cooking oil.
       
    7. Sprinkle casserole with rice krispies.
       
    8. Bake at 375 degrees F for 30 minutes.
