Rice Krispy Chicken Casserole

Ingredients
- 3 tablespoons butter substitute
- 1 tablespoon onion, chopped
- 3 tablespoons unbleached flour
- 1 cup fat free milk
- 1 cup fresh celery, chopped
- 3/4 cup fat free or low fat mayonnaise
- 2 teaspoons lemon juice
- Salt to taste
- 2 hard boiled eggs, chopped
- 3 cups cooked rice
- 2 skinless chicken breasts, cooked and cubed
- Rice Krispies
Instructions
- Preheat oven to 375 degrees F.
- Melt 3 tablespoons butter substitute.
- Saute onion until tender.
- Add flour and stir until smooth. Gradually add milk and stir until thickened.
- Combine sauce with all remaining ingredients except rice krispies. Mix well.
- Pour mixture into a baking dish that has been sprayed with cooking oil.
- Sprinkle casserole with rice krispies.
- Bake at 375 degrees F for 30 minutes.
