BBQ Chicken and Rice Skillet
A great stovetop meal! A one skillet meal made with chicken, barbecue sauce, corn and rice is a great way to get dinner on the table quickly. Try this one during the winter months when it's too cold to grill outside.

Ingredients
- 2 tablespoons oil
- 4 small boneless skinless chicken breasts
- 2 cups water
- 3/4 cup barbecue sauce
- 1 cup corn kernels
- 2 cups instant white rice, uncooked
Instructions
- Heat oil in a skillet over medium-high heat. Add chicken; cover. Cook 4 minutes on each side or until cooked through. Remove from skillet.
- Add water, barbecue sauce and corn to skillet. Bring to boil. Stir in rice.
- Top with chicken; cover. Cook on low heat 5 minutes.

Yuck. This recipe was awful. The chicken was dry and the rice was undercooked. It was also very bland. I couldn't even force it down. Will not make this again.
