Baked Orange Chicken
Simple chicken dishes rarely taste as good as Orange chicken. Instead of frying, make healthy chicken dishes using your oven. For moist boneless chicken breast and a healthy meal, try this recipe.
Notes
One does not have to flame the chicken. If you wish, use the remaining 1/4 cup orange liquor to baste the roasting chicken.

Ingredients
- 1/2 cup celery, chopped
- 1/2 cup onion, chopped
- 1/2 cup butter substitute
- 4 cups day old whole-wheat bread cubes for stuffing
- 1/2 cup pecans, chopped
- 1 teaspoon salt
- 1 teaspoon poultry seasoning
- 1/2 teaspoon pepper
- 1/2 cup orange liquor, divided
- 1 orange, peeled sectioned and chopped
- 1 fresh 5-pound chicken
Instructions
- In a large skillet, saute the onion and celery with the butter or margarine until soft.
- Mix in bread cubes, pecans, seasonings, 1/4 cup orange liquor and fresh chopped orange.
- Sprinkle chicken inside and out with salt and pepper. Stuff chicken with the prepared stuffing mixture.
- Bake on a preheated 400 degree F oven about 2 1/2 hours or until chicken is done and tender. Remove chicken to serving platter.
- Warm remaining 1/4 cup orange liquor, Ignite and pour over chicken. When flame dies, serve immediately.

What an interesting recipe. I have never stuffed any poultry with orange stuffing and flavoring. I have a recipe where the orange pieces and glazing are baked on the outside of the chicken. I will have to give this version a try.
