Chicken Fettuccine Chili's Style
This healthy chicken recipe, inspired by Chili's Grilled Chicken Fettuccine, as so much flavor, you will never believe that it has fewer calories than the original version. For a healthier take on a classic Chili's recipe, make this dish.
Ingredients
- 2 skinless boneless chicken breast halves, cut into strips
- 2 teaspoons low sodium Cajun seasoning
- 2 tablespoons margarine or butter substitute
- 1 1/2 cup evaporated skim milk
- 1/4 teaspoon dried basil
- 1/4 teaspoon lemon pepper seasoning
- 1/4 teaspoon salt
- 1/8 teaspoon pepper
- 1/8 teaspoon garlic powder
- 4 ounces whole wheat fettucine, cooked and drained
Instructions
- Place chicken and Cajun seasoning in a bowl or resealable plastic bag; toss or shake to coat.
- In a large skillet over medium heat, saute chicken in margarine until almost tender, about five to seven minutes.
- Reduce heat. Add evaporated milk and seasoning; heat through.
- Add pasta and toss; heat throughout. Sprinkle reduced fat Parmesan cheese if desired.
