Ingredients
- 2 skinless chicken breasts
- 1/4 cup organic honey
- 1 tablespoon curry powder
- 1 tablespoon French mustard (or other brand of your choice)
- Salt and pepper to taste
Instructions
- Wash skinless chicken breasts and pat dry.
- Open breasts flat by breaking bone at the thickest part.
- Mix all remaining ingredients together.
- Grease shallow baking dish with butter substitute and coat chicken breasts with curry mixture.
- Cook in microwave oven on full power, uncovered, for 15 minutes turning chicken over frequently in glaze.
- Alternately, cook on stove top until golden brown on both sides.

I have to say that the title of this dish is a little bit misleading. It should be called a honey - curry flavored chicken instead. A typical curry is a simmered saucy vegetable stew that sometimes contains a protein like chicken, shrimp, or even hard - boiled eggs. I would try the skillet method for this dish as I have had poor results with uneven microwave cooking in the past.
