Serves4
Ingredients
- 16 ounce chicken
- 1/4 cup quinoa flour
- 1/2 teaspoon ginger
- 1 tablespoon garlic
- 1/2 cup soy sauce
- 1/4 cup brown sugar
- 1 tablespoon red pepper flakes
- 1/2 cup green onions
- 1/2 cup water
Instructions
- First, combine the water and brown sugar until the brown sugar is dissolved. Then, add your low-sodium soy sauce and a tablespoon of red chili pepper flakes. Put this mixture off to the side.
- Cut your chicken into bite size pieces and toss in a bowl with your quinoa flour. (You can also use arrow root, corn starch, or any flour of your choosing to thicken your sauce.)
- Spray down a skillet with olive oil spray, then heat. Add your garlic. After sautéing for a few seconds, add your ginger.
- Now, add in the chicken. Once your chicken is cooked through, add the soy sauce mixture.
- Let it cook until the sauce reduces down and thickens up. While you're waiting for your sauce to thicken, chop up your green onions.
- Once sauce thickens, you're ready to plate your Mongolian Chicken. As a finishing touch, sprinkle with some green onions. You can serve your Mongolian Chicken with Quinoa.
