    Ingredients

    • 2 cups oats
    • 1 cup peanut flour
    • 3/4 cup whole wheat flour
    • 1 teaspoon baking powder
    • 1/2 teaspoon salt
    • 1/2 cup applesauce, unsweetened
    • 1/4 cup Brummel & Brownâ„¢ butter substitute
    • 1 cup NuNaturals NuStevia Sweetenerâ„¢ Stevia Baking Blend, or their MoreFiberâ„¢ Baking Blend
    • 1/3 cup egg substitute, or 1 egg
    • 1 teaspoon vanilla extract
    • 1/4 cup sugar-free preserves

    Instructions

    1. Preheat oven to 350 degrees F.
       
    2. Combine the oats, peanut flour, whole wheat flour, baking powder and salt in a medium to small bowl. Make sure they’re combined pretty well, and don’t stress too much if the peanut flour seems to be a little chunky. It will all work out in the end.
       
    3. Next, combine the butter substitute, applesauce and NuNaturals NuStevia Sweetener™ in a larger bowl and beat very well with an electric mixer until the mix gets fluffy and smooth-ish. Continue to beat and add in the egg substitute (or egg) , and the vanilla extract.
       
    4. You’ll probably have to turn the speed up on your mixer at this point because it’s going to get quite thick & sticky from here out. The next step is to gradually add your dry ingredients into the wet & keep beating until they are all well combined. You may have to stop the mixer & take some of the dough off the beaters to continue, but this is a good thing because it’s your chance to sample this sweet dough!
       
    5. Continue by spraying a lined baking pan, place into spoon-sized balls on a pan. Wet your thumb with water and imprint into the center of each dough ball then fill your centers with tiny spoonful of your sugar-free preserves.
       
    6. Place cookies in your oven for a quick bake of a mere 6-7 minutes.Take them out & let cool for a minute or two.
