Apple Cider Pork
Try this warm and tasty apple cider pork and vegetables for a great autumn meal. Add the ingredients to the slow cooker before you leave for work or start your day, and by the time you return, you will have a hearty meal waiting for you.

Ingredients
- 4 sweet potatoes, peeled and cut in 1/2 inch slices
- 6 ounces dried fruit mix package
- 1 medium onion, sliced thin
- 1 bay leaf
- 3/4 teaspoon salt
- 1/2 teaspoon pepper
- 1/2 teaspoon dried rosemary, crush
- 1 1/2 pieces lean boneless pork
- 1/2 cup all-purpose flour
- 2 tablespoons vegtable oil
- 1 cup apple cider
Instructions
- Place first 7 ingredients in slow cooker; set aside.
- Dredge pork in flour and brown in hot oil. Remove pork, reserving drippings in skillet. Place pork in cooker.
- Add cider to skillet, stirring to loosen any browned particles; pour over pork.
- Cover and cook on low 6 to 8 hours. Remove and discard bay leaf.

I made this for dinner tonight because I enjoy making apple porkchops and I wanted to use my new crockpot! However, the flavor in this is lacking, really. I follow recipes because I am not yet a very good cook, so I can't really say what it needs.. more apple cider, different spices, a little more salt might help? Honestly, I ended up eating the roast with ketchup.
