    Poached Salmon Cutlets

    Did you know that you can have great-tasting seafood from a slow cooker? What a pleasant, easy departure from grilling or frying fish!

    Ingredients

    • 4 salmon cutlets or 2 fillets
    • 1/2 pint water
    • 1/4 pint white wine
    • 1 teaspoon salt
    • 2 bay leaves
    • 2 teaspoons peppercorns
    • 1 medium onion, sliced
    • 1 sprig fresh rosemary
    • 1 sprig fresh oregano or thyme
    • 2 sprigs fresh parsley

    Instructions

    1. Lightly grease the bottom of the slow cooker, then place the salmon cutlets (or fillets) in the bottom.
       
    2. Put the remaining ingredients in a pan and heat until boiling.
       
    3. Remove from heat and pour over the salmon.
       
    4. Cover slow cooker and cook on low for approximately 3 hours. Serve hot, or cold with a salad.
