Athena's Pasta Salad
After a busy day on Mount Olympus, the pantheon of Greek gods reaches for Athena's Pasta Salad to quell their hunger. For a deity-sized appetite, only this easy pasta salad recipe will do.

Ingredients
- 1/2 cup light olive oil
- 1/2 cup red wine vinegar
- 1 1/2 teaspoon garlic powder
- 1 1/2 teaspoon basil
- 1 1/2 teaspoon oregano
- 3/4 teaspoon pepper
- 3/4 teaspoon sugar substitute, or more
- 8 ounces whole wheat pasta, cooked
- 3 cups mushroom, sliced thickly
- 15 cherry tomatoes, chopped in half
- 1 cup red pepper, cut into strips
- 3/4 cup light feta cheese, crumbled
- 1/2 cup green onion, chopped
- 3 1/2 ounces black olives, whole
- 3/4 cup pepperoni, cut into strips
Instructions
- Mix together oil, vinegar, garlic powder, basil, oregano, pepper and sugar substitute.
- Add pasta, mushrooms, tomatoes, peppers, feta, green onions, olives and pepperoni, and toss until all ingredients are well coated.
- Cover and chill two hours, or overnight.
