Fast and Simple Egg Salad
This is the fastest recipe you'll ever make. Add pickle, Hellmann's mayo and some sugar and your egg salad will be ready to go for a quick lunch or a delicious snack.
Ingredients
- 4 hard boiled eggs, yolks removed
- 1 pickle, diced
- 1 teaspoon yellow mustard
- 1 teaspoon pickle juice
- 2 teaspoons Hellmann's Low-Fat Mayonnaise
- 1 teaspoon sugar or splenda
- Salt and pepper to taste
Instructions
1. Mash cooled eggs with a fork.
2. Add in other ingredients.
3. Mix well.
4. Keep chilled.

For another healthy tip, consider replacing the mayonnaise with 1/2 of a peeled, pitted, and diced avocado. Note: The egg salad will have a little green coloring compared to other egg salads, but the texture will be very similar and it is a healthy, alternative choice!

I like your recipes for egg salad, but what I don't understand is what do you do with the removed egg yolks?
