Greek Style Pasta Salad with Feta Cheese
For a salty and tangy twist on your average pasta salad recipe, you absolutely need to try this Greek-Style Pasta Salad with Feta Cheese. Olives, orzo and Feta give this easy pasta recipe a terrific Mediterranean twist.
Ingredients
- 1 cup orzo pasta
- 1 cup flight Feta cheese, diced
- 3 tablespoons parsley, chopped
- 3 tablespoons dill, chopped
- 1 tomato, chopped coarsely
- 1/4 cup green olives
- 1/4 cup light olive oil
- 1/8 cup lemon juice
- Salt and pepper, to taste
Instructions
- Cook orzo according to packageuntil just tender. Drain and rinse with cold water.
- Once orzo has cooled, mix orzo, olives, feta, parsley, dill, and tomato in your serving bowl.
- In small bowl, whisk together oil and lemon juice. Mix into salad.
- Salt and pepper to taste. Refrigerate and chill before serving.
