Blueberry and Peach Cobbler
Blueberry and Peach Cobbler is a delicious and fresh dessert, especially for summer. The blueberries and peaches complement each other perfectly. Just top a fresh slice with some ice cream and you have the perfect ending to any meal

Ingredients
- 2 tablespoons sugar or sugar substitute
- 2 tablespoons brown sugar
- 1 tablespoon cornstarch
- 1/2 cup water or peach nectar
- 1 tablespoon lemon juice
- 2 cups fresh peaches, peeled and sliced
- 1 cup blueberries
- 1 cup flour, all-purpose or white whole wheat
- 1/4 cup sugar
- 1 1/2 teaspoon baking powder
- 1/2 teaspoon salt
- 1/2 cup skim milk
- 1/4 cup butter or margarine, softened
Instructions
- In a saucepan, combine sugar substitute, brown sugar, cornstarch, water and lemon juice. Bring to a boil, stirring until thick.
- Add fruit and pour into a 2 quart baking dish.
- For topping, combine flour, sugar, baking powder and salt in a mixing bowl. Stir in milk and butter.
- Spread over fruit mixture and bake at 375 degrees F for 50 minutes or until topping is golden brown and tests done. Serve warm.
