Easter Blue Pie

Ingredients
- 1 reduced fat cookie crumb pie crust
- 1 four-serving box sugar-free blue gelatin
- 1 cup boiling water
- 1 cup evaporated skim milk
- 3 cups non-dairy reduced fat whipped topping, cold but thawed
- 2 tablespoons Curacao
- 15 blue sugar-free Peeps
- 1 cup fresh blueberries
Instructions
- Freeze crust during pie filling preparation.
- Pour 1 cup of boiling water over gelatin in heat proof bowl. Stir to dissolve gelatin.
- Add one cup cold milk and Curacao. Blend well and refrigerate until gelatin has thickened, but is not firmly set.
- Fold in thawed topping to chilled gelatin mixture. Mix completely so that no streaks remain, but do not overwork.
- Spoon filling into frozen crust.
- Snip apart each family of Peeps. Arrange in circles atop pie filling.
- Use fresh blueberries to fill in gaps between Peeps.
- Refrigerate for at least three hours.
