Island Pineapple Jello Salad

Ingredients
- 8 ounces low fat cottage cheese
- 8 ounces Cool Whip light
- 1 small box sugar free orange jello, any flavor of your choice
- 1 cup pineapple chunks
Instructions
- Mix in the dry jello with the cottage cheese. Then, mix in pineapple and fold in Cool Whip.
- Cover and refrigerate until ready to serve.

I've been making this for years, only use Raspberry Jello, crushed pineapple and mandarin oranges. Everyone at church loves it and always say are you bringing the Pink Stuff.

cbswartz Do you still use the cottage cheese? And drain the mandarin oranges an pineapple?

My grandma made this for years, but she used lemon jello and added manadrin oranges and also added mini marshmellows. The Marshmellows help absorb the extra moisture that you can't get drained off the fruit. She would top it with cherries. I make it about once every two months, as it is handy for a light lunch
