Light Creamy Chicken Curry

Ingredients
- 4 to 5 chicken skinless breast fillets, diced
- 2 onions, chopped
- 1 garlic clove, crushed
- 3 tablespoons light cooking oil
- 15 grams (1/2 oz) medium curry powder
- 1 400 gram (14 oz) can of evaporated milk
- Salt and black pepper
Instructions
- Cook the chopped onions and garlic in the light oil, allowing them to color slightly.
- Add the curry powder and continue to cook.
- Season the diced skinless chicken breast with salt and pepper and add to the curried onions.
- Turn in the pan until completely cooked on all sides.
- Add the evaporated milk and bring to a simmer.
- Cook for 15 to 20 minutes, stirring every now and then to prevent it from sticking. Taste for seasoning and add curry powder to taste.
- To lift the finished dish, sprinkle with some fresh coriander.
