Ingredients
- 2 cups white whole wheat flour
- 1 cup miniature dark chocolate chips
- 1 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1 pinch salt
- 1 1/2 cup sugar substitute
- 1 cup reduced fat peanut butter
- 1/4 cup margarine, melted
- 4 egg whites
- 1 cup skim milk
- 1 teaspoon vanilla extract
- 2 teaspoons water, warm
Instructions
- Preheat oven to 400 degrees F. Paper-line 24 muffin cups.
- In large bowl, stir together flour, dark chocolate chips, baking powder, baking soda and salt; set aside.
- Combine 1 cup sugar substitute, reduced fat peanut butter, margarine and egg whites.
- Add skim milk and vanilla; stir until well blended. Add all at once to flour mixture; stir until just moistened.
- Fill muffin cups about 3/4 full. Bake for 15 minutes or until lightly browned; let cool for 5 minutes.
- Meanwhile, prepare sugar glaze. Stir together remaining sugar substitue with 3 teaspoons of warm water; stir until smooth and of desired consistency.
- Drizzle over cupcakes. Serve warm or cool.
