Pearadise Muffins

Notes
Variation: Grated lemon or orange zest may be added. To use sweet milk: omit yogurt and baking soda, increase baking powder to 3 tsps and use 1 cup fresh milk.
Ingredients
- 1 cup flour
- 1 cup whole wheat flour
- 1 1/2 teaspoon baking soda
- 1/2 teaspoon cinnamon
- 1 1/2 teaspoon baking powder
- 1/4 teaspoon nutmeg
- 1/2 teaspoon salt
- 1 cup plain yogurt
- 1/4 cup light vegetable oil
- 1/3 cup honey
- 2 egg whites, beaten
- 1 cup pears, diced
Instructions
- Preheat oven to 375 degrees F, and prepare your muffins pans.
- Mix together the flour, whole wheat flour, baking soda, baking powder, cinnamon, nutmeg and salt.
- Stir pears lightly into dry ingredients.
- Combine yogurt, oil, honey and egg whites. Add dry mix to wet mix until just combined.
- Spoon into pans and bake for 20 to 25 minutes or until done.
