15 Minute Shrimp Stir Fry
In less time than it takes you to watch your favorite sitcom, you have a dinner to be proud of ready to go. This simple pasta recipe with shrimp is overflowing with flavor.

Ingredients
- 1 pound whole wheat tubular pasta
- 2 teaspoons vegetable oil, divided
- 1/2 pound medium shrimp, shelled and deveined, or 12 ounces frozen shrimp, thawed
- 1 cup carrot slaw or coarsely shredded carrots
- 1 pound asparagus, cut diagonally into 2-inch lengths
- 6 to 8 green onions, cut diagonally into 2-inch lengths
- 1 tablespoon low sodium soy sauce
- 1 cup fresh orange juice
- Salt and pepper, to taste
Instructions
- Prepare pasta according to package directions. Drain, set aside and keep warm.
- Meanwhile, heat 1 teaspoon oil over high heat in a large nonstick wok or skillet. Stir-fry shrimp until firm and opaque, about two to three minutes. Remove and set aside.
- Add remaining vegetable oil to pan and stir-fry carrots one minute. Add asparagus and onions and stir-fry for another two to three minutes, until asparagus is tender-crisp.
- Add pasta, shrimp, soy sauce and orange juice to skillet and toss about two minutes.
- Season to taste with salt and pepper and transfer to a serving bowl.
