Decadent Bailey's Chocolate Pudding Pie

Ingredients
- 1 reduced fat graham cracker or chocolate cookie crust
- 1 envelope unflavored gelatine
- 1 teaspoon vanilla
- 3/4 cup skim milk
- 3/4 cup Bailey's Irish Cream
- 6 ounces bittersweet chocolate chips
- 2 cups fat free Cool Whip
- strawberries for garnish (optional)
Instructions
- Before heating, place skim milk in a large saucepan and sprinkle unflavored gelatine into pan.
- Let stand about 1 minute, then stir over low heat until gelatine is dissolved, about 5 minutes.
- Add chocolate chips and continue cooking, stirring constantly until chips are melted.
- Stir in vanilla.
- Remove from heat and stir occasionally.
- Add Bailey's about five minutes after removal from heat.
- When mixture thickens to form mounds when dropped from spoon, fold in fat free Cool Whip.
- Spread mixture into crust.
- Garnish with more whipped topping and strawberries (if desired).
- Chill at least 4 hours before serving.
