    Cooking MethodSlow Cooker

    Ingredients

    • 2 lean pork chops or filets
    • 1 cup fresh apples, chopped
    • 1 cup fresh or dried apricots, chopped
    • 1/2 cup fresh cranberries (optional)
    • 1 medium onion, chopped
    • 2 ribs celery, sliced in 1/2-inch pieces
    • 1/2 cup natural apple juice
    • 1/2 cup brown sugar
    • 1/4 cup dry sherry or wine (or try more apple juice)
    • Salt and pepper to taste
    • 1 1/2 tablespoon cornstarch mixed with 2 tablespoons cold water

    Instructions

    1. Combine all ingredients in slow cooker; cover and cook 7-9 hours on low.
       
    2. Approximately 30 minutes before serving, pour liquid into a separate container to skim off excess fat.
       
    3. Stir in cornstarch mixture and return broth to slow cooker.
       
    4. Continue cooking on low until smooth and it appears thickened.
