Blueberry Surprise Potato Salad
Take your classic potato salad recipes and add some unexpected pizazz! The addition of blueberries not only makes this a surprisingly different - and delicious - potato salad, it kicks up the nutrient value with antioxidants and more. Love those blueberries!

Ingredients
- 1/4 cup white wine vinegar
- 1 tablespoon olive oil
- 1/2 teaspoon sugar or sugar substitute, such as Splenda or NutraSweet
- 1/2 teaspoon salt
- 1/2 teaspoon dried basil, crushed
- 1/8 teaspoon black pepper
- 4 cups potatoes, cooked and sliced
- 1 cup fresh blueberries
- 1/2 cup cucumber, diced
- 1/2 cup carrot, shredded
- 2 tablespoons scallions, chopped
- 2 tablespoons parsley, chopped
Instructions
- Prepare the dressing by combining the vinegar, oil, sugar, salt, basil, and pepper, blending well.
- In a large bowl, combine the dressing with the potatoes, mixing well.
- Stir in the blueberries, carrot and cucumber.
- Sprinkle with the chopped scallions and parsley.

I take back that remark about mixing fruits n' veggies, I do put tomatoes in my salads and I put onions in my guacamole too, I spoke too soon.....oopps!

I would be more inclined to substitute the berries with green or black olives, I'm not all that crazy about mixing my veggies with fruit. Sorry!
