Shanghai Chicken Salad

Ingredients
- 5 cups cooked chicken, shredded
- 3/4 cup hoisin sauce
- 3 tablespoons Asian sesame oil
- 6 cups iceberg lettuce or Napa cabbage, shredded
- 3/4 cup green onions, sliced
- 1 jar (20 0z.) Del Monte® SunFresh® Pineapple Chunks, drained
- 1 cup red bell pepper, julienned
- 1 cup yellow bell pepper, julienned
- 1/2 cup oil
- 1/4 cup white wine vinegar
- 1 tablespoon sugar
- 1/2 teaspoon dry mustard
- 1 cup cilantro, stems removed
- 1 cup peanuts, chopped
Instructions
- Combine chicken, hoisin sauce and sesame oil in bowl; mix well.
- Combine lettuce and green onions and spread over serving platter.
- Combine pineapple, red and yellow bell peppers.
- Whisk together oil, vinegar, sugar and mustard. Toss 1/4 cup dressing with the pineapple and bell pepper mixture. Spoon over lettuce.
- Top with chicken. Drizzle remaining dressing over chicken. Sprinkle with cilantro and peanuts.
