Thai Chicken Noodle Salad
For a light and healthy meal, give this chicken, noodle and vegetable salad a try. Marinate chicken in the Thai dressing for several hours before cooking for the best flavor.

Ingredients
- 1 cup soy sauce
- 1 cup rice vinegar
- 1/2 cup brown sugar
- 1/4 cup sesame oil
- 2 teaspoons ginger
- 2 teaspoons garlic
- 2 skinless boneless chicken breasts
- 4 green onions, minced
- 1 bunch cilantro, minced
- 1 teaspoon chili paste
- napa cabbage
- carrot peel
- cooked rice noodles
Instructions
- Mix together soy sauce, rice vineger, brown sugar, sesame oil, ginger and garlic.
- Marinate chicken breast in dressing for 4 hours.
- Cook on grill or broil until no longer pink.
- Mix together green onions, cilantro, chili paste, cabbage, carrots, and cooked rice noodles for salad.
- Serve grilled chicken on top of salad with fresh dressing drizzled over.
