Wonderful White Gazpacho
For a unique and flavorful twist on a traditional gazpacho soup recipe, make this Wonderful White Gazpacho. Almonds give this cold soup recipe its distinctive taste and texture.

It may be necessary to add more cold water after chilling.
Ingredients
- 5 slices dry whole wheat French or Italian bread
- Water, enough to cover and soak bread
- 5 cloves garlic
- 250 grams ground almonds, about 1 cup
- 1 teaspoon salt
- 1/2 teaspoon sugar substitute
- 200 milliliters olive oil, about 3/4 cup plus 1 tablespoon
- 7 tablespoons vinegar
- Additional water
Instructions
- In blender or food processor make a smooth puree with all the ingredients.
- Add water little by little until the desired consistency is reached. Taste for salt, sugar substitute and vinegar.
- Chill thoroughly and serve with halved grapes or whole raisins floating on top.
