Cold Sun Dried Tomato Bisque
This chilled tomato bisque is perfect for hot summer days. With a touch of sweetness from sun-dried tomatoes and smokiness, this is no ordinary tomato soup.

Ingredients
- 2 cups water
- 2 cups V8 juice
- 1/2 medium onion
- 1/2 teaspoon ground garlic
- 1 teaspoon dried dill
- 1/4 teaspoon pepper
- 2 ounces sliced sun-dried tomatoes
- 1 tablespoon liquid smoke
- 1/2 cup skim milk
Instructions
- Bring 2 cups of water to boil in sauce pan, add tomatoes.
- Cover, reduce heat and simmer 3-5 mins. Drain water off.
- Cover tomatoes with cool water, soak for about 5 mins, drain.
- Put tomatoes, 1 cup juice, onion, garlic, dill weed, pepper and smoke in container of electric blender; process until smooth; add remaining 1 cup of v-8 juice.
- Add milk, process until blended. Chill thoroughly or over night.
