Sunshine Cranberry Sauce

Ingredients
- 2 (12-ounce) bags cranberries
- Zest of one orange, grated
- Zest of one lemon, grated
- 1 cup sugar substitute
- Juice of orange and juice of lemon, to taste
Instructions
- Place cranberries in a large pot or saucepan.
- Cook, covered, at low heat, with no additional water, until the cranberries start softening, popping, etc. Stir occasionally for about an hour.
- Add lemon zest, orange zest, and sugar substitute. Stir together.
- Turn heat to medium-low, so that it gets hot but doesn't burn or boil.
- Cook covered for a half hour, stirring occasionally.
- Add orange juice, lemon juice and more sugar substitute as needed.
- Cook uncovered for 15 minutes or until sauce is thick.
- Let cool then refrigerate.
