Turkey Sandwich Melt
For a great leftover idea, take the turkey from Thanksgiving and make these sandwiches for lunch or dinner. The whole family will love these turkey sandwich melts because they're hearty and full of flavor.

Ingredients
- 10 slices of leftover turkey
- 1/4 cup low-fat shredded cheddar cheese
- 2 tablespoons low-fat mayonnaise
- 1 tablespoon onion, finely chopped
- 1 Kosher Dill Mini Pickle, finely chopped
- pepper to taste
- 2 sandwich rolls, partially split
Instructions
- Preheat oven to 350 degrees F.
- Mix turkey, low-fat mayo, low-fat cheese, onion, pickle and pepper until well blended.
- Fill rolls evenly with turkey mixture.
- Place in shallow baking pan or on baking sheet.
- Cover tightly with foil and bake until heated through (usually 15 minutes).
