Ingredients
- Blondies:
- 3/4 cup natural peanut butter
- 1/3 cup Earth Balanceâ„¢ (vegan butter alternative), softened
- 1/4 cup unsweetened applesauce
- 1/4 cup unsweetened almond or soy milk (vanilla or plain)
- 1/2 cup organic brown sugar
- 2/3 cup NuNaturals Nustevia Sweetenerâ„¢ Baking Blend, or their MoreFiberâ„¢ Baking Blend
- 1 1/4 cup whole wheat pastry flour
- 1 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1/2 teaspoon salt
- Chocolate Ganache:
- 3/4 cup vegan chocolate chips
- 1/3 package (4 ounce) extra firm silken tofu
- 1/2 teaspoon vanilla extract
- 1 splash almond or soy milk, if needed
Instructions
- Preheat oven to 350 degrees F.
- In a large bowl, cream together peanut butter and Earth Balance™. Add in brown sugar, NuNaturals NuStevia Sweetener™,vanilla, applesauce and milk, and beat until fluffy.
- In a smaller bowl, combine flour, baking soda, baking powder, and salt.
- Add a little at a time to the peanut butter mixture until incorporated.
- Spread the mixture in the bottom of an 8-inch by 8-inch pan that has been sprayed with cooking spray. Bake for 20 minutes.
- Meanwhile, melt chocolate chips in the microwave or in a double boiler. Cream melted chocolate with tofu, vanilla and milk, if needed.
- Let blondies cool entirely before spreading with the chocolate ganache and cut into squares.
- Keep refrigerated.

Our recipes on FaveHealthyRecipes all offer healthier alternatives to your favorite recipes by substituting certain ingredients for comparable products when possible; of course, the real ingredient is always accepted, as well.
