Vicki's Vegan "Mac and Cheese"
Vicki is a pro at eating well and living a vegan lifestyle. She decided one day that she missed the taste of good old macaroni and cheese recipes and so invented this tasty recipe. The texture and richness with remind anyone of mac and cheese.
Notes
It is very creamy, there is a different flavor but we like it a lot. The dish is a lot like macaroni and cheese in that it is warm and creamy and comforting, looks the same, and has a related and pleasant, mild taste. Vegans will enjoy being able to taste macaroni and cheese again.
Ingredients
- 1/2 cup nutritional yeast
- 1/2 cup unbleached wheat flour
- Garlic powder or fresh garlic
- Salt to taste
- 2 cups filtered or bottled water
- Whole wheat macaroni, cooked
Instructions
- Whisk ingredients in a sauce pan over medium heat until thick and bubbling.
- Remove from heat, add a little butter substitute and a teaspoon or so of mustard if desired.
- Serve sauce over cooked macaroni noodles.
