    Bok Choy and Mushrooms

    This healthy vegetable side dish uses only a small amount of sesame oil and vegetable broth. This is a great compliment to lean protein.

    Ingredients

    • 1 teaspoon sesame oil
    • 2 cups sliced mushrooms
    • 1/2 teaspoon ground ginger
    • Salt and pepper to taste
    • 3/4 cup vegetable broth
    • 2 pounds bok choy, diagonally sliced into 1-inch pieces

    Instructions

    1. Stir fry mushrooms and bok choy until slightly soft.
       
    2. Add in ground ginger.
       
    3. Turn burner to high and add in vegetable broth and sesame oil. Stir until liquid reduces.
       
    4. Add any salt and pepper to taste. Serve with brown rice and a lean protein.
