Easy Mashed Sweet Potatoes
Mashed potatoes are a classic dish. This quick and easy recipe is a healthy take on the classic dish, with less fat and more nutrients than the traditional version.
Ingredients
- 4 sweet potatoes
- 2 medium purple onions, coarsely chopped
- 1/2 cup butter substitute
- 1 teaspoon salt
- 1/2 teaspoon red pepper, ground
- 2 tablespoons light maple syrup
- 1 tablespoon lemon juice
- 1 teaspoon cinnamon, ground
- 1 teaspoon cumin, ground
- 1/2 cup pecans, chopped and toasted
Instructions
- Peel and cube sweet potatoes.
- Combine sweet potatoes, onions and butter substitute in a lightly greased 11 x 7-inch or shallow 2-quart baking dish; sprinkle with salt and red pepper.
- Bake, covered, at 375 degrees F for 40 to 45 minutes or until potato is tender. Remove from oven.
- Add syrup,lemon juice, cumin and cinnamon; mash, leaving a few lumps.
- Sprinkle with pecans.
