Ridiculously Easy Eggplant Parmesan

Ingredients
- 2 medium eggplants, peeled and sliced into 1/2-inch thick pieces
- 2 tablespoons light vegetable oil
- 1 clove garlic, minced
- 2/3 cup Italian-style whole wheat bread crumbs
- 3/4 cup reduced fat Parmesan cheese, divided
- 3 cups brown rice, cooked
- 30 ounces prepared low sodium pasta sauce
- 2 cups reduced fat Mozzarella cheese, shredded
Instructions
- Cook eggplant in oil with garlic in large skillet over medium-high heat; set aside when eggplant is cooked through.
- Combine breadcrumbs with two tablespoons Parmesan cheese. Place eggplant slices in 13 by 9-inch glass casserole, overlapping slices if necessary. Sprinkle with breadcrumb mixture.
- Combine rice, sauce and remaining Parmesan cheese in large bowl; pour mixture over eggplant. Sprinkle casserole with Mozzarella cheese.
- Bake at 375 degrees F for 20 minutes, or until cheese is melted and lightly browned.

this recipe is gross. The eggplants became soggy. the breadcrumbs tasted like something I would put on a mac and cheese and the rice just didnt belong. Gross I am so upset I wasted my time and money on this recipe I WOULD NOT CALL THIS EGGPLANT PARM AT ALL. Its so much easier just to make eggplant parm. dip eggplant in egg, than italian breadcrumbs, put in fry pan with a little oil and when cooked golden brown spoon hunts tomatoe sauce over wach one than sprinkle with mozzarella cheese and its delicious

This is the most disgusting recipe I have ever made. It was a long process to make it also, it would of been so much easier to make the original eggplant parmesan. My eggplant was soggy with bread crumbs on top yuck with rice sauce and cheese...I should of known. I thought it would be good it sounded good. dont try this if you love crispy eggplant parm than you would hate this recipe. soggy eggplant disgusting
