Zucchini Carrot Pancakes
Create a healthy vegetable snack or side dish that even kids will love with these vegetable pancakes. Serve with tomato sauce, fat free sour cream or a small amount of Parmesan cheese.

Ingredients
- 2 zucchini, grated
- 1 cup carrot, grated
- 1/2 cup onion, grated
- 2 eggs
- 1 teaspoon baking powder
- Salt and pepper, to taste
- 1 cup flour
Instructions
- Mix all ingredients together in order.
- Heat non-stick skillet or spray skillet with cooking spray.
- Roll small amount of zucchini mixture into ball and flatten with hand into a pancake. Brown on both sides on medium heat. Serve with parmesan cheese or sour cream.

"2 Zucchini" is very vague, I would like to try this but I would want a more specific amount for the zucchini.
