Quick Barley Pilaf
A great healthy side dish, this quick and easy barley pilaf will surprise even the pickiest eaters. Serve it with a chicken or fish dish. It's a great new spin on the traditional rice pilaf.

Ingredients
- 3 cups water
- 1 vegetable bouillon cube
- 1 cup quick pearl barley
- 2 tablespoons vegetable oil
- 1/2 cup onion, chopped
- 10 ounces frozen peas
Instructions
- In large saucepan, bring water and bouillon cube to a boil. Stir in barley; reduce heat. Cover; simmer 10 to 12 minutes or until tender, stirring occasionally. Drain.
- In large skillet, heat oil. Cook onion and frozen peas about 5 minutes; reduce heat. Add cooked barley; mix well.
- Continue cooking over low heat until heated through, stirring occasionally.
