Low Fat Apricot Chicken
This unique apricot chicken is a delicious meal that the whole family can enjoy. The kids will love the sweetness of the apricot preserves and the creaminess of the yogurt. They'll never know they are eating a healthy dish.

Ingredients
- 2 tablespoons margarine
- 2 tablespoons olive oil
- 8 chicken breast halves, skinned
- 1/2 cup flour
- 1 teaspoon salt
- 1/2 cup apricot preserves
- 1 tablespoon Dijon mustard
- 1/2 cup nonfat yogurt
- 2 tablespoons slivered almonds
Instructions
- Preheat oven to 375 degrees F. Melt margarine with oil in a shallow baking pan.
- Meanwhile, shake chicken in a plastic bag filled with flour and salt until chicken is coated. Place chicken in a single layer in the baking pan and bake for 25 minutes.
- Combine apricot preserves, mustard, and yogurt. Spread apricot mixture on chicken and bake for 30 minutes more or until done Just before serving, brown almonds lightly and sprinkle almonds over chicken and serve over rice.

Chicken is my favorite thing to cook but I often use the same recipes which usually involve either a type of glaze or rich sauce. This recipe seems like something new and fun, with ingredients I wouldnt ever think to use to cook chicken in. I will definitely have to try this recipe!
