Layered Berry Parfait
This low fat vegan desserts recipe is a great way to include fiber into your diet. Add this to your vegan diet foods list. Use fresh berries to add a fresh taste to your desserts with this, one of the best very easy dessert recipes around.
Notes
If desired, chill parfaits for 1 hour before serving. Substitute any other fresh berries for those listed above. You may substitute frozen berries for fresh, if desired, but frozen berries will exude more juice than fresh berries.

Ingredients
- 1 cup fresh blueberries
- 1 cup fresh strawberries, sliced
- 1 cup fresh red currants
- 1 cup fresh blackberries
- 1/3 cup sweet dessert wine or apple juice
- 1 1/2 cup fresh red raspberries
- 3 tablespoons maple syrup
- 2 cups crumbled vanilla wafer cookies
- 4 sprigs fresh mint leaves
Instructions
- In a large bowl, combine blueberries, strawberries, currants, blackberries, and wine or apple juice.
- Let stand for 20 minutes, stirring occasionally. Meanwhile, puree raspberries and syrup in a blender or food processor until smooth.
- To assemble dessert, spoon a layer of mixed berries into the bottom of 4 parfait glasses or wine glasses. Top with a drizzle of raspberry puree, then vanilla wafer crumbs.
- Repeat until all ingredients are used, ending with a drizzle of raspberry puree. Garnish each serving with a sprig of mint.
