Flying Phoenix Shrimp Fried Rice

Just like a phoenix flying over the Great Wall, this dish will enable you to enjoy a delicious meal as you bask in the knowledge that you are eating a healthy and satisfying meal. Chinese food recipes often are high in sodium, but this meal is a variation on traditional Chinese food recipes that is heart healthy and low in fat.

Ingredients

  • 1 small onion
  • 1 cup peas
  • 2 tablespoon plus another 2 tablespoons reduced sodium soy sauce
  • 3 or 4 tablespoons light vegetable oil
  • 1 egg beaten
  • 1 cup shrimp
  • 1 thin slice of turkey bacon

Instructions

  1. Gather a large cup of long grain rice.
     
  2. Bring a saucepan that is 2/3 full of water to boil. Add the rice grains and stir until the water re-boils.
     
  3. Cook for 9 minutes and then turn the heat down so that the water simmers.
     
  4. Remove the pan from the heat and fill to the top with cold water. Drain well and then cover the pan and leave rice to cool.
     
  5. In a wok, or large based pan, heat the light vegetable oil. Add the onions and diced bacon. Saute over a moderate heat for 2-3 minutes.
     
  6. Reduce the heat to low and add the beaten egg. When it has set, break it up into small pieces and stir.
     
  7. Turn heat up and add the shrimps. Fry for 2 minutes. Add the peas and fry for 2 minutes. Add the soy sauce and mix well.
     
  8. Next, add the cool boiled rice and heat through, stirring constantly. Season with desired amount of salt & pepper.
     
  9. Serve and sprinkle with reduced sodium soy sauce to taste while eating. This is a large helping for 2 people!
