Ingredients
- 2 pound head of cauliflower
- 2 tablespoon sesame oil, divided
- 1 cup carrot, diced
- 1 tablespoon minced garlic
- 1 cup edamame, thawed and drained if frozen
- 1 cup sliced green onions, including some of the tender green tops, divided
- 2 eggs
- 3 tablespoon low-sodium soy sauce
- 1 tablespoon toasted sesame seeds, optional

Instructions
To Make the Cauliflower Fried Rice

Cut core and leaves from cauliflower, then pull apart florets. Place into a food processor in two batches and process until cauliflower resembles grains of rice.

In a wide non-stick skillet over medium-high heat, place 1 tablespoon oil and the carrots. Stir for 3 to 4 minutes until tender. Add cauliflower, edamame, and half of the onions and stir until well mixed.

Beat the eggs in a small bowl with the soy sauce. Push vegetables to the edges of the pan and pour in the beaten eggs, stirring until the vegetables are hot and mixed.

Add the final sesame oil and serve garnished with the rest of the onions and sesame seeds. Enjoy!
