No Bake Energy Bars

The typical energy bar recipe used to make the popular supermarket food items uses lots of added sugar and other dubious add-ins. Here, in this No Bake Energy Bars recipe from Dorothy Delaney, only wholesome and all-natural ingredients are used. Make a raw vegan treat that everyone can enjoy with this healthy bar recipe.

Ingredients

  • 1/2 cup raw cashews (or walnuts, almonds, pecans, macadamia, hazelnuts, coconut)
  • 1/2 cup raw flax seeds
  • 1/2 cup raw pumpkin seeds (or sunflower, chia, psyllium)
  • 1 cup (loosely packed) pitted dates, prunes and dried blueberries, soaked 10 minutes or more in apple juice (my favorite) coconut nectar or water
  • CHOCOLATE SAUCE:
  • 1/2 cup liquid coconut oil or cacao butter
  • 2 tablespoon raw honey or coconut nectar
  • 1/4 cup cacao powder (I mix mine half with carob)
  • 1 tablespoon mesquite or lucuma powder (optional)
  • 1 dash vanilla powder
  • 1 pinch crystal salt

Instructions

  1. In a food processor, grind the nuts and seeds until fine, then pour them into a bowl.

  2. Grind the dried fruit next, and stir by hand into the nuts and seeds until it makes a soft dough.

  3. Divide into 8 sections. Cut wax/parchment paper into 4-inch x 8-inch rectangles and place one scoop of batter onto each paper, shaping into a bar with a knife.

  4. Freeze for at least 10 minutes. Eat immediately, or cover with chocolate sauce and freeze again.

  5. To make the chocolate sauce, melt those ingredients in a double boiler. Stir or blend until creamy. Pour over chilled energy bars.
