Rhubarb Oats Bar
Use your oatmeal in a unique way; make a rhubarb oatmeal bar! This rhubarb recipe is anything but ordinary. This is a great way incorporate fresh fruit and whole grains.

Ingredients
- 1 cup all-purpose flour
- 3/4 cup oatmeal, uncooked
- 1 cup light brown sugar, packed
- 1/2 cup butter substitute, unsalted, melted
- 1 cup sugar substitute
- 2 teaspoon cornstarch
- 1 cup water
- 1 teaspoon vanilla extract
- 4 cup rhubarb
Instructions
- Pre-heat oven to 350 degrees F.
- Mix flour, oatmeal, light brown sugar, and butter substitute until crumbly.
- Press half of the mixture into greased nine inch pan.
- Add rhubard and cut in 1/2 inch pieces.
- Pour sauce over rhubarb.
- Top with other half crumb mixture.
- Bake at 350 degrees F for 45 minutes.
Sauce
- 1 cup sugar substitute
- 2 teaspoons cornstarch
- 1 cup water
- 1 teaspoon vanilla extract
- Combine sugar substitue, cornstarch, water, and vanilla.
- Cook until thick and clear.
