Crispy Carrot Spelt Waffles

Ingredients
- 3 cup spelt flour
- 1 tablespoon baking powder
- 3 tablespoon ground flaxseed
- 1 teaspoon sea salt
- 1 teaspoon ground cinnamon
- 1 teaspoon ground ginger
- 1 cup grated carrots
- 3 cup room temperature plant milk of choice
- 1 cup coconut oil, melted
- 1 teaspoon pure vanilla extract
- 3 tablespoon agave or maple syrup
- vegan butter and maple syrup, for serving

Heat a waffle iron.

In a large bowl, combine the dry ingredients. Whisk together the spelt flour, baking powder, ground flaxseed, salt, cinnamon, and ginger.

In a separate bowl, whisk together the wet ingredients, including the plant milk, melted coconut oil and vanilla extract.

Pour the wet ingredients into the dry ingredients and whisk to combine. Fold in the grated carrots and let the batter rest for 5 minutes.

Cook the waffles in the waffle iron until they're crispy on the outside and fluffy on the inside. Serve warm.
